  1. Bring a large pot of water to boil for the pasta. When it boils, salt the water and cook the noodles until almost done. Drain well and return noodles to pan.
  2. While water is boiling, wash and dry all produce. Chop the mushrooms (as small as you like) and scallions (separating the white and green parts).
  3. Preheat a large skillet over medium high heat. Add oil and ground turkey, cook until no longer pink, about 8 minutes.
  4. Add the mushrooms and scallion whites, cook 3-5 more minutes, or until mushrooms are soft. Season with thyme. Cook for another 5 minutes.
  5. Add the stock to the pan, scraping up drippings and browned bits from bottom of the pan. Bring to a bubble, stir in cream and reduce the heat to low. Taste and adjust seasonings if necessary.
  6. Combine cooked pasta with the turkey/sauce mixture and add the swiss cheese. Top with scallion greens just before serving.
Recipe Notes

Have Leftovers? Make a soup! Add enough milk to thin out the sauce. Heat in a large pot over medium heat. Once the soup starts to bubble, slowly add a handful of shredded cheese to the mixture.
