  1. Bring a large pot of water to a boil. Cook the pasta to package directions. Drain well and return noodles to pan.
  2. While water is boiling, wash and dry all produce. Chop scallions (separating the white and green parts).
  3. Preheat a large pan over medium-high heat. Add oil and ground turkey. Cook until no longer pink, about 8 minutes.
  4. Add spinach, scallion whites and thyme to pan. Cook until spinach is wilted, about 7-8 minutes.
  5. Add stock to the pan. Once bubbling, stir in cream and turn heat to low.
  6. Mix cooked pasta with the turkey/sauce mixture and add the swiss cheese. Top with scallion greens just before serving.
Recipe Notes

Leftovers? Make a soup! Add enough milk to thin out the sauce. Heat in a large pot over medium heat. Once bubbling, slowly add a handful of shredded cheese to the mixture.
