4 tablespoons canola oil, (or 3 tablespoons canola and 1 tablespoon sesame oil) 2 large eggs, beaten 1 bunch green onions, roughly chopped 2-3 cups vegetables, thawed if frozen, chopped 4 cups brown rice 4 tablespoons soy sauce 4 tablespoons water 1 dash salt 1 dash black pepper

- In a large non-stick skillet, heat one Tablespoon oil over medium-high heat.
- Sauté vegetables 5 to 7 minutes until beginning to soften, remove from skillet.
- Heat 1 Tablespoon oil, then add the eggs and green onions. Scramble eggs until cooked through and lightly browned.
- Stir in vegetables, rice and remaining oil. Increase heat slightly and cook until rice is crispy, about 5 minutes.
- In a small bowl, combine the soy sauce and water. Pour the mixture over the rice. Continue cooking, stirring occasionally until the rice has absorbed all of the liquid, another 3 to 5 minutes.
- Season with salt and pepper, if desired, and serve.
