1 carrot, or small sweet potato, small zucchini 1/4 medium head lettuce 2 large tomatoes 4 oz cheddar cheese, low fat 1 can pinto beans, low-sodium (15½-oz) non-stick cooking spray 1 lb ground turkey 1 can tomatoes, chopped or crushed, no salt added (15½-oz) 1 tablespoon chili powder 1 teaspoon garlic powder 1 teaspoon dried oregano 1/2 teaspoon salt 1/2 teaspoon black pepper 16 taco shells

- Rinse, peel, and grate carrot.
- Rinse and shred lettuce, rinse, core and chop tomatoes.
- Grate cheese.
- Drain and rinse beans in a colander.
- Spray a large skillet with pan spray, add ground turkey and cook until there is no pink.
- Add grated veggies, beans, canned tomatoes, chili powder, garlic powder, oregano, salt, and pepper. Mix until combined.
- Reduce heat to medium. Cook until thickened, about 20 minutes.
- Add 2 tablespoons cooked mixture to each taco shell. Top with 1 tablespoon grated cheese, 1 tablespoon shredded lettuce, and 1 tablespoon fresh tomatoes.
