1/2 pound whole wheat pasta 1 pound ground turkey 1 pound mushrooms, white, sliced 6 scallions 1 cup stock 1/2 cup cream, heavy 2 cups swiss cheese, grated 1 tablespoon oil 2 teaspoons dried thyme

- Bring a large pot of water to boil for the pasta. When it boils, salt the water and cook the noodles until almost done. Drain well and return noodles to pan.
- While water is boiling, wash and dry all produce. Chop the mushrooms (as small as you like) and scallions (separating the white and green parts).
- Preheat a large skillet over medium high heat. Add oil and ground turkey, cook until no longer pink, about 8 minutes.
- Add the mushrooms and scallion whites, cook 3-5 more minutes, or until mushrooms are soft. Season with thyme. Cook for another 5 minutes.
- Add the stock to the pan, scraping up drippings and browned bits from bottom of the pan. Bring to a bubble, stir in cream and reduce the heat to low. Taste and adjust seasonings if necessary.
- Combine cooked pasta with the turkey/sauce mixture and add the swiss cheese. Top with scallion greens just before serving.
