1 small onions, chopped 1 clove garlic, chopped 3 cups black beans, soaked and cooked 4 cups vegetable broth 1 cup corn

- In a large pot over medium heat, cook onion and garlic until soft.
- Add black beans and broth and bring to a boil.
- Once the soup begins to boil, turn the heat down to low and cook for about 15-20 more minutes, stirring occasionally.
- Pour soup in a blender carefully and mix it until smooth. If you don’t have a blender skip this step and leave the beans whole.
- In a small pan, cook the corn until hot.
- Carefully pour the soup in 4 bowls and top with corn and additional toppings of your choice.
