  1. In a large pot over medium heat, cook onion and garlic until soft.
  2. Add black beans and broth and bring to a boil.
  3. Once the soup begins to boil, turn the heat down to low and cook for about 15-20 more minutes, stirring occasionally.
  4. Pour soup in a blender carefully and mix it until smooth. If you don’t have a blender skip this step and leave the beans whole.
  5. In a small pan, cook the corn until hot.
  6. Carefully pour the soup in 4 bowls and top with corn and additional toppings of your choice.
