1 large zucchini, cut into 1/2 inch thick slices 1 large summer squash, cut into 1/2 inch thick slices 1 cup tomatoes, cut in half 2 tablespoons oil 4 cloves garlic, or 2 tablespoons of garlic powder 1 1/4 teaspoon Italian seasoning 1 cup cheddar cheese, or of your favorite cheese, shredded

- Preheat oven to 400F.
- In a small bowl whisk together oil, garlic and Italian seasoning. Place zucchini, squash and tomatoes in a large mixing bowl. Pour olive oil mixture over top and gently toss with hands to evenly coat.
- Pour onto baking dish and spread into an even layer. Season with salt and pepper. Sprinkle cheese over the top of the vegetables.
- Bake in oven for 25-30 minutes.
