  1. Preheat oven to 425F.
  2. After washing and drying vegetables, cut up the broccoli in equal-sized pieces. Green beans can remain whole.
  3. Toss the vegetables in oil just until they shine.
  4. Spread the vegetables on a baking sheet in a layer so they are not stacked on top of each other.
  5. Make sure to stir the vegetables as they cook and watch until they get tender and browned.
  6. When browned, remove from oven and sprinkle salt and pepper or any of your other favorite herbs and spices.

Roasting is a simple way to prepare many different vegetables. All you need is a bit of oil and any herbs and spices that you like. You can get creative in the types of vegetables you roast (and easily substitute fresh, canned or frozen vegetables), along with the herbs and spices you include. Don’t forget to cut all of the pieces in similar sizes for even cooking! They can be used in a side dish or can be added to pasta, pizza, on top of toast or wherever you like.
