While pasta is cooking, set a wide pan over medium-high heat. Add oil and eggplant cubes. Sprinkle with salt and garlic powder, and cook until the cubes start to brown, about 5 minutes.
Once cubes are a little brown on all sides add the tomatoes and cook, stirring occasionally, for about 15 minutes.
Once the pasta is cooked, combine the drained pasta and the eggplant mixture into one pan, stir in cheese and enjoy!
