1 package whole wheat pasta, or favorite pasta 2 tablespoons oil 1 large eggplant, cut into cubes 2 tablespoons garlic powder 2 cans tomatoes, 16 oz 1/4 cup feta cheese, or favorite cheese 1/2 teaspoon salt

- Cook pasta to package directions.
- While pasta is cooking, set a wide pan over medium-high heat. Add oil and eggplant cubes. Sprinkle with salt and garlic powder, and cook until the cubes start to brown, about 5 minutes.
- Once cubes are a little brown on all sides add the tomatoes and cook, stirring occasionally, for about 15 minutes.
- Once the pasta is cooked, combine the drained pasta and the eggplant mixture into one pan, stir in cheese and enjoy!
