Lamb Gyro
1 pound ground lamb meat, thawed 1 tablespoon oil 4 whole wheat pitas 1 medium tomatoes, sliced 1 medium onions, sliced
For the sauce:
1/2 cucumber, peeled and diced as small as possible 1 cup Greek yogurt 1 lemon, juiced 1 teaspoon fresh dill 1/4 teaspoon black pepper
Optional Toppings:
1/2 cucumber, sliced olives feta cheese fresh dill

- In a large skillet over medium-high heat, heat oil and cook lamb until there is no pink.
- While the meat is cooking, add all the sauce ingredients into a bowl and mix until combined.
- Place a strainer over any bowl that will hold it up and pour meat into strainer to drain. (Don’t worry the bowl underneath the strainer will catch any grease.) Wipe pan dry with towel or cloth and return to low heat.
- Place 1 piece of pita bread in pan, cooking for about 30 seconds, just long enough to warm it.
- Once warmed spread a couple spoonful's of sauce on pita bread and spread it around.
- Add 1/4 of a cup of ground lamb meat on top of sauce.
- Top with a couple slices of tomato and onions and enjoy.
