Citrus Kale Salad
1 bunch kale, (stalks removed thinly sliced with knife or torn by hand) 1 tablespoon lemon juice, about 1 lemon (fresh) 1/4 cup oil, example: olive or canola oil 1/3 teaspoon salt 2 teaspoons honey, or brown sugar 1/4 teaspoon black pepper 1 cup citrus fruit, drained, or any favorite fruit

- Add kale to serving bowl with half of the lemon juice and about 1 tablespoon oil and salt.
- Massage the kale with your hands until it starts to feel soft and slightly wilted (2-3 minutes).
- In a small bowl mix lemon juice, honey and black pepper. Slowly pour in the remaining oil while whisking the dressing. (Optional: substitute with your favorite salad dressing).
- Add dressing and citrus fruit to kale to make salad.
