  1. Cook rice following package directions. Add cauliflower half way through rice cooking time according to package directions.
  2. In a large skillet over high heat, add oil and chicken, cook about 3-4 minutes. Add ginger, garlic, cabbage, carrots, scallions and black pepper. Cook for 2-3 minutes.
  3. In a medium bowl whisk together soy sauce and sweet chili sauce. Carefully toss rice with sauce, evenly coating.
  4. Divide the rice between four bowls. Top with chicken and vegetables.
