1 1/2 cups brown rice 3 teaspoons vegetable oil 1/4 pound chicken breasts, cut into bite sized pieces 2 tablespoons ginger 3 medium carrots, shredded 6 cloves garlic 1 bunch scallions, thinly sliced 1 small cabbage, thinly sliced 1/2 teaspoon black pepper 1 cup riced cauliflower 1/4 cup soy sauce, low sodium 1/3 cup sweet chili sauce

- Cook rice following package directions. Add cauliflower half way through rice cooking time according to package directions.
- In a large skillet over high heat, add oil and chicken, cook about 3-4 minutes. Add ginger, garlic, cabbage, carrots, scallions and black pepper. Cook for 2-3 minutes.
- In a medium bowl whisk together soy sauce and sweet chili sauce. Carefully toss rice with sauce, evenly coating.
- Divide the rice between four bowls. Top with chicken and vegetables.
