  1. Preheat oven to 375 degrees. Wash and dry swiss chard. Remove stems and discard from leaves. Stack leaves in a pile. Chop leaves into medium-sized pieces.
  2. In a large bowl, mix water, tomato sauce, diced tomatoes and rice.
  3. Add spices and chopped swiss chard to rice bowl.
  4. Lay chicken thighs in single layer in casserole dish. Sprinkle with all-purpose seasoning.
  5. Pour the rice mixture over the chicken thighs.
  6. Sprinkle with 1 cup shredded parmesan cheese and cover with foil. Bake for 45 minutes, or until rice is cooked.
Recipe Notes

Pro Tip: To easily separate the stem and leaves of the swiss chard, hold the large part of the stem with one hand. With the other hand, make a circle around the stem. Hold stem firmly and slide the circle hand down to other side of the stem against the leaf.
