1/2 pound whole wheat pasta 2 cups spinach 6 scallions 1 pound ground turkey 1 cup stock 1/2 cup cream, heavy 2 cups swiss cheese, shredded 1 tablespoon oil 2 teaspoons dried thyme

- Bring a large pot of water to a boil. Cook the pasta to package directions. Drain well and return noodles to pan.
- While water is boiling, wash and dry all produce. Chop scallions (separating the white and green parts).
- Preheat a large pan over medium-high heat. Add oil and ground turkey. Cook until no longer pink, about 8 minutes.
- Add spinach, scallion whites and thyme to pan. Cook until spinach is wilted, about 7-8 minutes.
- Add stock to the pan. Once bubbling, stir in cream and turn heat to low.
- Mix cooked pasta with the turkey/sauce mixture and add the swiss cheese. Top with scallion greens just before serving.
