Instructions
  1. Preheat oven to 375F.
  2. Rinse and dry eggplant and pepper. Cut eggplant and bell peppers into equal size strips.
  3. Lay pieces of eggplant and bell peppers on the baking sheet., sprinkle with oil, salt and pepper.
  4. Cook for about 30 minutes, until tender and soft.
  5. Note: Serve warm. Sprinkle with balsamic vinegar if available.
