1 large eggplant 1 large bell peppers, red 2 teaspoons oil 1/2 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon balsamic vinegar, optional

- Preheat oven to 375F.
- Rinse and dry eggplant and pepper. Cut eggplant and bell peppers into equal size strips.
- Lay pieces of eggplant and bell peppers on the baking sheet., sprinkle with oil, salt and pepper.
- Cook for about 30 minutes, until tender and soft.
- Note: Serve warm. Sprinkle with balsamic vinegar if available.
