Beets grow underground. If you’ve ever cut a beet you know that the pigment will stain your hands! Those plant pigments are called betaines and are also found in swiss chard’s colorful stems.
Storage Tips
Store beets and their greens tops separately in the refrigerator. You can eat both. Make sure to remove rubber bands and ties.
Preparation Tips
Rinse them (greens too!) under running water before you enjoy! Scrub to remove any soil and debris. Clean skins are safe to eat.
